The vine and the watch
Jean-François in the vineyards, Marie-France in the Pineaux, she makes them, raises them patiently for 2 to 3 years, before assembling them, in an independence that she cherishes. To make her products successful, she carefully monitors her grapes, to detect those that will be destined to be processed. The limestone terrains lend themselves to excellent musts, but it is still necessary to know how to express their characteristics.
The vines intended to produce the musts for the Pineau are pruned specifically, in order to optimize the maturity of the fruits and their sugar content. His property of the Tuilerie is located on the limestone plateaus between Chenac and Barzan. At the level of the estuary it benefits from the reverberation of the Sun on the water of the sea.
Marie-France's tanned complexion throughout the year is unequivocal proof of this. The grapes, on the other hand, take advantage of this to slowly reach their maturity, gorging themselves with sugars and aromas, just as they take advantage of Marie-France's nightlight instinct.Patient, she watches for the right moment to pick up according to maturity.
